Frijoles — a regional staple — Los frijoles (beans) are central to many Latin American cuisines and appear in countless dishes: frijoles negros, frijoles refritos (refried beans). In Spain, the more common term is las alubias or las judías. El arroz con leche (rice pudding) and la pasta con queso (pasta with cheese) are simple combo phrases using these words.
