Bueno is an adjective — it modifies nouns — Bueno/a/os/as agrees in gender and number with the noun it modifies: Es un buen libro, una buena película, unos buenos amigos. Note bueno shortens to buen directly before a masculine singular noun, but stays full after it: el libro es bueno.

Bien is an adverb — it modifies verbs — Bien never changes form. It modifies verbs (how something is done) and adjectives of degree: Habla bien. Lo hace bien. Está bien hecho. Never use bien to describe a noun — that would need bueno: Es una buena persona, not Es una bien persona.

After ser vs estar — Ser + bueno describes a permanent quality: Es buena persona (she's a good person by nature). Estar + bien describes a current state or that something is OK: Estoy bien, gracias. El informe está bien. Mixing these up is one of the most common learner errors.
